i baked my very first pumpkin yesterday! and pumpkin fever has officially begun.
It started last night with peanut butter pumpkin pie and ton of roasted pumpkin seeds.
And continues today with, what will probably turnout to be, a cross between this pumpkin ricotta and spinach tart recipe and this tarta de calabaza y espinacas bicolor. And for dessert, i know it’s not pumpkin but i have a ton of sweet potatoes too, this sweet potato pie with pecan topping.
i got a subscription to vegetarian times for my birthday and have been cooking up a storm lately!! my favorite one so far has been the spicy tofu bento bowl! yum. the cold french lentil salad was super tasty. and tonight, i’ll see how the lentil pate turned out!
