Happy New Year! Another year has begun!
I don’t like to make New Years Resolutions. It seems too passe. I like the sound of “Goals” a little better. My goals for January are big. We’ll see how they pan out… together! (One goal is to write a new article for you everyday!)
Another goal is to make every meal all month at home (or at a friend’s house). First of all, to save some money (we seem to have been going out a bit too much the last few months). Second of all, I’ve really enjoyed cooking lately and would love a little push to make me explore it a bit more. So, for all of you out there, if you’re hungry for some home cookin’ this month, head on over to my place, there’s sure to be something tasty freshly made.
This goal started last night. We got home late and tired from a long weekend away, but I was determined. I’m not much of a soup person, but am hell bent on trying to change that. So, I made “Creamy Spinach Soup”. The main reason for this choice being that it only took 40 minutes from start to finish to make. And, it turned out pretty good! I got the recipe out of my big green cookbook, The Essential Vegetarian Cookbook by Diana Shaw.
I love the rich dark green color the spinach turns. The flavor is light and rich, very full and filling. And not too creamy. The recipe is simple. Saute an onion. Add a pound and a half of spinach and a tablespoon of flour. Saute til wilted. Then puree in a food processor. In a separate bowl, whip one egg yolk and a half cup of buttermilk. Then add that to the spinach puree and put over a low heat for about five minutes. SO simple! We made a little grilled cheese sandwich to beef up the meal a bit.
Oh, my third and final (kind of) goal for this month is to make more pinch pots! I’m really excited about this one. I’ve been meaning to make another batch of pots for a few months now. And have only managed to make two. My goal for this month is to make 15. I think that’s totally doable. And I would love to share my process with you. So, stay tuned!
